ACTUALIZATION OF ISSUES OF IDENTIFICATION AND FALSIFICATION OF POMEGRANATE JUICES

Abstract
Azerbaijan has such a specific product is pomegranate juice. That he is able to conquer new markets and to receive the highest ratings. It said more than once, and came into the country visit, after tasted juices with amazing sensory properties of the varieties of the Azerbaijani reproduction, such as Gyuleysha, Bala Myursal, Velez and others. With such a unique resource base, it would seem, the golden rule should be preservation of unique natural properties of the product in order to intervene in the dispute for the world championship in the production of the best pomegranate juice. But it turns out, you can forget about this rule and disrupt the technology or even falsify the product in the pursuit of short-term profit. This conclusion is made by some experts on the basis of the work done by them to identify the authenticity of pomegranate juice Some Azerbaijani producers. But in this case, we are all interested to learn about the criteria that were followed in determining the authenticity of the product.
