Analysis of quality and food safety management systems in the dairy industry

Abstract

The article presents the characterization of the dairy industry and an analysis of the status of implementation of quality, food safety, environment and industrial safety management systems in dairy plants. The analysis contain dairy plants from the voivodeships of Pomerania, Kujawy, Mazovia, Podlasie and Warmia and Mazury. The research carried out in the analysis of management system implementation motives, the causes of changing the certification body, the reasons for implementation of different management systems as well as the benefits and problems resulting from the implementation of management systems. Food safety and quality management systems were the most often implemented. Less than half of dairy companies declared a partial or full integration of implemented systems. The main premises of the implementation of management systems were the requirements of the retailers and customers as well as improving of the company image. Dairy plants faced a number of problems, including costs of implementation (consultations, trainings), preparing and implementation the documentation as well as staff reluctance. However they observed some benefits after the implementation of the management systems. An arrange responsibility and increased of the staff consciousness were the most frequently indicated profits.
