COMPARISON OF SLAUGHTER YIELD, CONTENTS OF BASIC NUTRIENTS, AND HEAVY METALS LEVELS IN MUSCLES OF CARP (CYPRINUS CARPIOL.) FARMED IN VARIOUS REGIONS IN POLAND

Abstract

The subject of the study were muscles of carp originating from two provinces (voivodships) in North Poland and three in South Poland. The effect was analyzed of the farming location and type on the chemical composition, health quality, and technological usefulness of this fish. The research scope included the determination of the slaughter yield of fish, the contents of water, protein, fat, and mineral compounds in the form of ash, and the levels of arsenic, lead, mercury and cadmium in the carp tissues. The slaughter yield of fish and the content of protein and mineral compounds in the fish tissues were similar in all the farms studied. The muscles of the fish from the farms located in the Malopolska and Świętokrzyskie contained the highest amounts of fat and dry weight; this was attributed to the method of feeding the fish. It was found that the maximum levels of heavy metals as set in the Regulation of the European Commission No. 1881/2006 were not exceeded in any of the analyzed muscle samples of the fish from various farms. Neither the feeding method nor the level of industrialization of the region where the fish were bred were confirmed to impact the heavy metal contamination in the tissues of the fish studied
