CRITERIA OF FOOD SUPPLIER CHOICE IN THE CASE OF THE PROSPECTIVE DEVELOPMENT OF A GASTRONOMIC ENTERPRISE

Abstract

The aim of the paper was to isolate the main criteria for the choice of food suppliers on the market including the type of eatery, type of cuisine, how long the place has existed on the market and the source of food supplies. The study was conducted between 2012 and 2016. Analysis has showed that eateries draw their supplies from wholesalers who deliver and self-service wholesalers. The most significant criteria for the choice of suppliers include: price, quality of goods as well as speed and timeliness of deliveries. Suppliers have been chosen according to a persistent model for years in spite of changes that have occurred in consumption trends.<br/><br/>
