Effect of baker's yeast on the intensity of oxidative processes in the liver in Russian sturgeon (Acipenser guldenstaedtii) fingerlings

Abstract
The article describes the impact of inactivated baker's yeast as a food supplement in the composition of the starter feed for Russian sturgeon (Acipenser guldenstaedtii) fingerlings. In particular, the study investigates their influence on the intensity of oxidative processes by the example of the activity of the antioxidant defense system enzymes (catalase and superoxide dismutase) and the level of accumulation of lipid peroxidation products (dien conjugates and malonic dialdehyde) in the liver. It reveals that although yeast causes a mild oxidative stress, it, on the whole, has a strong positive effect on the antioxidant defense system of the body of Russian sturgeon fingerlings.
