Health properties of tomato fruit and preserves made from them

Abstract

The tomato fruit is rich in vitamins, minerals and biologically active substances whilst retaining low calorific content. Due to its beneficial flavor characteristics and culinary properties, as well as the high nutritive value, they are gaining ever greater popularity amongst consumers. The tomato is currently the most popular vegetable. The consumption of fresh tomatoes as well as products made from them is growing, which reflects the dynamic growth of the market for new products processed using tomatoes as the base or as one of the ingredients. The aim of this article is to discuss the health properties of tomato based products, of fresh tomatoes and of their nutritive content. The study also shows the working of biologically active substances naturally occurring in fresh tomatoes and preserves made from them in prophylactic cancer treatment. The leading role of lycopene is highlighted, which not only gives the tomato and preserves made from it the red colouring, but also shows powerful antioxidant properties. This powerful antioxidant protects from free radical attack, but also increases immunity in the human body, improves skin condition and aids in the proper functioning of the circulatory and skeletal systems. Besides lycopene, tomatoes also contain vitamin C, flavonoids, macro and microelements.
