Effect of Heat Treatments and Two Types of Containers on Physiochemical Properties and Microbial Load of Cow milk

Abstract
This study was conducted to evaluate the influence of heat treatments and two types of containers on physiochemical properties & microbial load of cow milk. And the experiment treatments were divided as (A: Water path without cover), (B: Water path with cover), (C: Direct flame without cover) and (D: Direct flame with cover) and containers (Steel (S) and Aluminum (M)). The approximate analysis for milk sample was performed, and physicochemical properties of (pH, SNF and density), content of some minerals (P, Ca, Mg, Na and K ) and Microbiological analysis (Total viable count of bacteria, Total coliforms and E. coli) were done. The results showed that heating was increased all the proximate analysis of milk, and there is a significant difference (P≤ 0.05) between raw milk sample and heating milk samples by two types of containers by all methods of heating in the proximate analysis of milk. Heating was increased the Ca, Mg, Na and K, decreased P, all differences were significant (P≤ 0.05). The results showed there is a significant difference (P≤ 0.05) between raw milk sample and heating milk samples by two types of containers by all methods of heating in Microbiological analysis. Sensory evaluation of heated milk samples the panelists preferred DM in Colour, taste, texture and General acceptability.
