Stevia as sweetener and functional food

Abstract

Regarding the daily trend of obesity incidence and increase of concerns about security of some synthesized sweetener, the requirements to non-caloric sweetener seems necessary as much as consumers’ knowledge about using low-caloric sweetener has led to reduce sugar consumption. Stevia also has the anti-cancer and hypertension properties and thus regards as a functional food.
