The Effects of Nisin and Natamycin on the Microbiological, Chemical and Sensorial Qualities of Meatballs
Journal Title: Cumhuriyet Science journal - Year 2017, Vol 38, Issue 4
Abstract
Meatballs are known to be one of the foodstuffs most sensitive to microbiological deterioration due to their physical and chemical properties. Meat and meat products are known to be the leading sources of food-related diseases. Nisin and natamycin are natural additives which are known for their activities in the inhibition of microorganisms. In this study, an evaluation was made of the effects of nisin and natamycin on the properties of meatballs and the possibilities for use of these natural antimicrobials in meatballs were investigated. Chemical, microbiological and sensory analyses to determine quality were applied to meatball samples which included these natural antimicrobials at different ratios. Moisture, crispness, fat content, pH, total aerobic mesophilic bacteria count and sensory values of the meatball samples which included 0, 2.5 and 5 g nisin/kg and 0, 2.5 and 5 g natamycin/kg were analysed at 0th, 5th, 10th and 15th days, and changes in the product structure were recorded. The sensory properties of the meatballs were moisture, crispness, strange taste and odour, colour, flavour and overall taste. Multi-criteria decision-making techniques, SAW and TOPSIS tests were performed for the sensory analysis. The results showed that the acceptable consumption period of meatballs which included these antimicrobials was increased. According to the sensory analyses the most preferred meatball sample was that which included 5 g nisin.

Notes on Fuzzy Parametrized Soft Sets
In this paper, we introduced the notion of inverse Fp soft set and studied some properties of it. Moreover, by using this new concept we characterized the continuity of Fp soft mappings and continuity of fuzzy soft mappi...
Evaluation of dosimetric impact of Flattening Filter-Free (FFF) Photon Beams in 3D conformal radiotherapy
Flattening Filter Free (FFF) photon beams have been frequently used in radiotherapy clinical practice. This study aimed to analyze the dosimetric quality of the FFF beams, as compared to the standard flattened beams (FB)...
Adsorption of Uranyl Ions in Aqueous Solutions of Maleic Anhydride-alt-Styrene Copolymers
In this study, Maleic anhydride-alt-styrene (MA/S) copolymer was synthesized in benzene solution with an initiator such as azobisisobutyronitrile by free radical copolymerization. Anhydride units are seen in resulting co...
Double Actions of Groups
In this work, we present the concept of double action of a group on a set as a new concept in literature, which opens up the way for applying rich amount of algebraic topological facts and methods in the algebraic topo...
Determination of Trace Levels of Nitrite in Beverages Samples Through Micellar Improved Catalytic Kinetic Spectrophotometry
In this study, a simple and sensitive catalytic kinetic spectrophotometry method for determination of nitrite has been described. The method is based on the oxidation of chlorpromazine by nitrite in presence of mixed sur...
