Use of Chitosan Film Coatings in the Storage of Carrots (Daucus carota)

Abstract

Chitosan film applied to coat carrot slices affected metabolic changes that increased the content of total phenolic acids and flavonoids. Chitosan coating of carrot slices delayed the overripening process and, consequently, lowered the content of reducing sugars. The use of chitosan coatings delayed the drop in the processing suitability of minimally processed carrot roots.
