Effect of storage period on chemical composition of meat from broiler chicken fed mixtures oiled with linseed oil and including various doses of vitamin E

Abstract
The effect of broiler ROSS 308 feeding with mixtures containing linseed oil (6%) and different levels of vitamin E: group I — 40 mg/kg in Starter and 35 mg/kg in Grower; experimental groups (Starter/Grower): II — 100, III — 150, IV — 250 mg/kg as well as the effect of the storage period of meat on the basic element content and fatty acid profile in lipid fraction were tested. Samples of breast and leg meat from 40 broilers at the age of 6 weeks (5♀ and 5♂ as a representative of each feeding group), which were divided into 4 parts after mincing, were used as an experimental material. One part of the samples was directly analysed, and the other parts were stored in cold (–22oC) for 4, 8 and 12 months.No effects of experimental factors on fat content were found, however, the level of vitamin E in mixtures modified ash content, whereas the storage period affected total protein content in both muscles. The linear growth of polyunsaturated fatty acid content in meat together with the increase in vitamin E dose in mixtures was proved. Both the storage period and vitamin E content had a positive effect on the hypercholesterolemic acid content.
