Ensuring the health safety of milk and dairy products during cold storage

Abstract

Polish accession to the European Union has forced the need to comply with the standards for raw and finished food products. Under EU law (Regulation (EC) No 2073/2005), food business operators responsible for the manufacture of the products should conduct microbiological research to investigate compliance with the criteria throughout the shelf-life. The paper presents the most important legal aspects related to the requirements of raw materials and finished products. The importance of the cold chain continuity maintenance is also discussed and a simulation example of the breakpoint on the dairy product is presented. The authors also signaled the possibility of using databases and predictive microbiology to determine the microbiological risk during cold storage of food products. The opportunities for Salmonella and Listeria in flavored UHT milk in a situation of re-infection and interruption of cold chain are identified. The possibilities of the use of generally available and free ComBase database and its tools for prognostic are described. It was concluded that it is very useful databases in support produced in support of food safety assurance systems in the food chain.
