Key definitions determinants format business-model at the enterprises restaurant business

Abstract
Purpose. The article is to identify the key determinants define the format of the business model of restaurant business enterprises. Basic tendencies and internal problems of development of the definition of features of formation of business model restaurant business, given that in the enterprises of this sector, along with the implementation of its production is organized consumption and provide consumers with a variety of services. Methodology of research. The solution of these problems in an article carried by such scientific and special methods of investigation as analysis, synthesis, comparison, generalization and systematization, the dialectical approach. Findings. We studied the existing approaches to the classification of restaurant business enterprises. The features of the value chain enterprises restaurant business. Practical value. The article substantiates that the implementation of the proposed key determinants (geographical scope of operations, the characteristics of value: range, the nature of the service, the concept of realization of dishes) will contribute to the definition of the type of format reasoned business model restaurant business enterprises.
