OPTIMIZING DETERMINANTS IN SELECTING DISTRIBUTION SYSTEM FOR HOSPITAL CATERING

Abstract

In hospital catering, two systems of distributing meals are applied: tray (individual) and bain marie (collective). While choosing a system, attention is drawn to the profitability of the investment and the functionality of the system after its implementation in hospitals. The objective of the research study was to comparatively analyze two meal distribution systems: trays and ‘bain maries’ meal serving using the example of a newly designed provincial specialist hospital. While comparing the two systems, two factors were taken into account: organizational factor (surface area of meal dispatch section, technological equipment) and economic factor (costs of: floor area of meal dispatch section, technological equipment, and electric power). Already at the stage of investing, the tray system should be regarded as a more preferred one owing to economic reasons. The estimated costs of technological equipment for that system are higher; however, the expenditures involved in the construction and finishing of the interiors are lower compared to the bain-marie system. In the research study, the consumption of electric power necessary for the equipment to operate was highlighted, too. The technological equipment recommended for the tray distribution system makes it possible to significantly reduce the monthly costs of electricity. Based on the analysis of organizational and economic factors of the hospital designed for 600 patients, it was concluded that the individual system of meal distribution should be recommended as a meal distribution system to be applied therein.
