Selected production parameters and utility value of rainbow trout (Oncorhynchus mykiss) of two weight sorts

Abstract
The aim of this study was to compare the selected production parameters and utility value of rainbow trout of two weight sorts. The study involved 20 trouts from a fish farm localized in the Lublin voivodeship. Two sorts considering the weight of fish were distinguished, i.e. M (up to 500 g, n = 10) and D (above 500 g, n = 10). Fattening of fish from M sort lasted for 18 weeks with a total gain averaged 202.57 g per individual, and trout from D sort were fattened for 50 weeks with the average total gain amounting to 602.40 g. The average daily gain for heavy fish amounted to 1.72 g per individual and was significantly (p ≤ 0.01) greater than for lighter ones (about 1.32 g). The percentage of edible parts as well Fulton index were similar in the compared sorts of fish. However, fillets of trouts from D sort had significantly (p ≤ 0.05) lower pH after 24 h and were darker compared with the fillets from lighter fish (M sort).
